Garlic Lamb Chops with Feta Lemon Chips
Agh these chips are everything, I’m a big lover or baked golden feta, with crispy chippies and lemony zest… what a combo! Paired with tender lamb chops. You’re welcome!

Ingredients
4 x Pasture-Raised Lamb Loin Chops
3 Garlic Cloves, minced
2 tbsp Extra Virgin Olive Oil
1 tsp Dried Rosemary
1 tsp Oregano
Pinch Salt & Pepper
Extra Virgin Olive Oil, for cooking
Feta Lemon Chips
2 Potatoes, cut into chips
2 tbsp Extra Virgin Olive Oil
1 Lemon, juice & zest
1 Garlic Clove, minced
1 tsp Oregano
1 tsp Thyme
¼ cup Feta, cubed
Method
1. Preheat oven to 180 degrees and prepare a baking tray.
2. In a bowl combine potatoes, oil, lemon, garlic, oregano and thyme. Lay out on to the baking tray and add feta cubes.
3. Bake for 30-35 minutes or until chips are golden (flip halfway during cooking).
4. Meanwhile, add lamb loin chops to a bowl. Coat with garlic, oil, rosemary, oregano, salt and pepper.
5. Heat a frying pan until hot, drizzle with oil.
6. Cook chops to your liking, flipping halfway.
7. Serve lamb chops alongside feta lemon chips (you may like to break up some of the golden feta cubes, sprinkling feta crumbs over the chips).
