Protein Lettuce Wraps with Peanut Sauce

Ingredients
Filling
Extra Virgin Olive Oil, drizzled
½ Onion
2 Garlic Cloves, minced
250g Grass-Fed Beef Mince Meat
¼ cup Lentils, cooked
1 Red Chilli, sliced
1 tbsp Tamari
2 tsp Sesame Oil
1 Carrot, grated
1 Spring Onion, sliced
Peanut Sauce
1/3 cup Peanut Butter
2 tbsp Tamari
1 Garlic Clove, minced
½ Lime, juiced
1-2 tbsp Water
¼ tsp Chilli Flakes
To Serve
1 Large Iceberg Lettuce (lettuce leaves separated)
Lime Wedges
Crushed Peanuts, optional
Method
1. Heat a medium frying pan and drizzle with oil.
2. Add onion and garlic, cooking until softened.
3. Add mince and cook until partially browned and broken up.
4. Add chilli, tamari, sesame oil, cooking until the liquid has absorbed and the meat is fully cooked through.
5. Remove from heat and stir through carrot and spring onion (or serve these fresh if you prefer the crunch).
6. Prepare peanut sauce by combining all ingredients in a bowl or blitz in a blender.
7. Serve filling in a lettuce leaf. Drizzle peanut sauce and serve with lime wedges and crushed peanuts.
