Lemon Chicken

This recipe is light and full of zest.
Cauliflower rice is a favourite of mine… so quick and easy. You just chuck the cauli heads in the blender, give it a couple pulses and bam you got rice baby! 
Plus in this recipe I have included bone broth. Any excuse to get it in to heal our beautiful gut forests and reduce inflammation!
I try to have bone broth every single day, so whenever I am able to sneak it into a meal.. it’s a bonus! 

 
Lemon Chicken
 

Servings: 2

Ingredients

1 cup Free-Range Chicken Bone Broth or Vegetable Stock
1 Garlic Clove, minced
300g Free-Range Chicken Breast, sliced 
½ Lemon, juiced 
6 stalks Broccolini 
1 tsp Extra Virgin Coconut Oil
½ Cauliflower, roughly chopped
3 Spring Onions, finely chopped
Salt & Pepper, to taste
½ Lemon, cut into wedges 

 
 

Method

1.     Add broth & garlic to a medium saucepan and bring to a boil. 

2.     Add chicken and reduce to a simmer, cooking for 4 minutes. 

3.     Add lemon juice to saucepan and stir through. 

4.     Place broccolini on top of chicken and broth, allowing the steam to cook until tender, approximately 3 minutes. 

5.     Meanwhile, blitz cauliflower in a blender into a rice like consistency. 

6.     Heat oil in a medium frying pan on a medium heat.

7.     Add cauliflower and spring onion to frying pan and cook until heated through, stirring occasionally, approximately 3 minutes. 

8.     Plate cauliflower rice topped with chicken, broccolini and broth. Serve with additional lemon wedges.
