Lemon Fried Snapper with Curry Mayo
This batter is everything, the fish goes so golden and remains delicate inside. Paired with a homemade curry mayo, delish!

Ingredients
3 tbsp Coconut Flour
1 tbsp Tapioca Flour
½ cup Soda Water
2 x Fillets Wild Gold Band Snapper
Extra Virgin Coconut Oil, for frying
Lemon Wedges, to serve
Curry Mayo
2 tbsp Mayonnaise
½ Lemon, juice & zest
2 tsp Curry Powder
Method
1. Combine mayonnaise, lemon juice and curry powder in a bowl. Set aside.
2. In a flat bowl combine coconut flour and tapioca flour, in a separate bowl add soda water.
3. Coat fish in flour and then place in soda water, repeat this process twice for each fillet.
4. Heat a frying pan and generously add coconut oil, fry fish on each side until golden.
5. Serve fish with a side or curry mayo and lemon wedges.
