XMAS Pizza Wreath

Ingredients
Pizza Base
2 cups Spelt Flour
1 tbsp Granulated Sugar (I used Rapadura)
½ tsp Salt
7g sachet Dried Yeast
1 cup Warm Water
Toppings
3 tbsp Tomato Paste
180g Free-Range Nitrate Free Bacon
1 cup Mozzarella, grated
½ Green Capsicum, finely diced
6 Cherry Tomatoes, halved
Garlic Powder, sprinkled
½ Red Capsicum, finely sliced
Fresh Rocket, to serve
Fresh Basil Leaves, optional garnish
Method
1. Preheat oven to 180 degrees.
2. In a large bowl combine spelt flour, sugar, salt and dried yeast.
3. Add the warm water to the bowl and using your hands mix the ingredients until combined.
4. Add the dough to a floured surface and knead for 5 minutes or until the dough feels smooth (sprinkle more flour if the dough is too sticky). Form into a ball and place in a bowl covered for 10 minutes.
5. Place the dough onto a floured surface and roll out to a round pizza shape.
6. Cut out a circle in the middle to create a wreath shape (I used a large cookie cutter, but a knife will do).
7. Place pizza wreath and the smaller circle on a lined baking tray or pizza stone.
8. Top with tomato paste, bacon, mozzarella cheese, green capsicum, cherry tomatoes and sprinkle with garlic powder.
9. Position the red capsicum at the top of the wreath in a ribbon shape. Place a cherry tomato in the centre of the ribbon.
10. Bake for 10-15 minutes or until pizza base is crispy and cheese has melted.
11. Serve with fresh rocket and basil leaves.
