Almond Chocolate Donuts
It’s about time I created a doughnut recipe.
These donuts are gluten free using almond flour, yet they still have that light donuty texture.
Topped with a homemade choc glaze and sprinkled with extra almonds for a little crunch. You’re going to LOVE these.
Servings: 6
Ingredients
1 cup Almond Flour
1/3 cup Cacao Powder
¼ cup Rapadura or Coconut Sugar
1 tsp Baking Powder
½ tsp Cinnamon
Pinch Salt
3 Free-Range Eggs
¼ cup Unsweetened Plant Based Milk (I used Almond)
¼ cup Grass-Fed Butter, melted
1 tsp Vanilla Extract
¼ cup Almonds, roughly chopped
Chocolate Glaze
½ cup Dark Chocolate Chips, melted
¼ cup Coconut Yoghurt
1 tbsp Maple Syrup
Cacao Powder, sifted (optional to darken colour)
Method
1. Preheat oven to 180 degrees and grease a donut tin.
2. Combine almond flour, cacao powder, sugar, baking powder and cinnamon in a large bowl.
3. In a separate bowl, whisk eggs, milk, butter and vanilla.
4. Pour wet ingredients into dry and stir to combine.
5. Pour mixture in tin and bake for 15-17 minutes or until a skewer comes out clean. Allow to cool.
6. Meanwhile, combine chocolate glaze ingredients in a bowl (if you want it to be darker stir in additional cacao powder ½ a teaspoon at a time).
7. Spread the glaze on the doughnuts and sprinkle almonds.
