Flourless Pumpkin Brownies
So everyone over on insta is sharing their delish pumpkin recipes for halloween. Although us Aussies don’t really celebrate I wanted to jump in on the fun. I find it so interested how popular pumpkin is in America they even have canned puree! I totally do want to try a pumpkin pie one day, but for now we have FLOURLESS pumpkin brownies.
Pumpkin is such a fantastic natural sweetener and provides a fantastic texture. Due to pumpkins orange colour they contain beta carotene, this is an antioxidant and it is converted to Vitamin A. This means pumpkins are amazing for eye health, skin and immunity!
Servings: 9
Ingredients
2 cups Pumpkin, cubed
¾ cup Nut Butter (I used Peanut Butter)
½ cup Cacao Powder
1/3 cup Maple Syrup
Optional Chocolate Topping
3/4 cup Yoghurt (I used Coconut)
2 tbsp Cacao Powder
1 tbsp Maple Syrup
Method
1. Preheat oven to 180 degrees conventional.
2. Steam pumpkin until softened, approximately 10 minutes.
3. Mash pumpkin in a bowl and add remaining ingredients. Stir until combined.
4. Pour mixture into a brownie tin and bake for 20- 25 minutes, or until top starts to crisp.
5. Combine topping ingredients and spread.
