Baked Lemon Feta Prawns
Zesty and oh so delicious! This dinner is SO flavourful
especially for the very minimal effort involved.

Ingredients
200g Wild Prawns
½ Broccoli, cut into florets
1 Lemon, juice & zest
2 tbsp Extra Virgin Olive Oil
1 Garlic Clove, minced
1 tsp Chilli Flakes
¼ tsp Salt
Pinch Pepper
100g Feta, broken into chunks
1 tbsp Chives, finely chopped
1 tbsp Fresh Parsley, chopped
Serving Suggestion
Rice or Orzo
Method
1. Preheat oven to 180 degrees.
2. In a baking dish (I used a lasagne dish), add prawns, broccoli, lemon juice, lemon zest, olive oil, garlic, chilli flakes, salt and in pepper. Add feta and use a spoon to mix and combine all ingredients.
3. Bake for 15 minutes or until prawns are tender.
4. Sprinkle with chives and parsley (option to serve with rice or orzo).
