Squid Garlic Butter Orzo

When was the last time you had squid?
I grew up loving crumbed calamari and honestly have always been intimated to cook squid, which was ridiculous as it’s literally the easiest thing to cook.
This is a delicious quick meal with tasty garlicy squid and flavourful risoni!

Servings: 2

Ingredients

3 tbsp Grass-Fed Butter
1 Onion, diced
4 Garlic Cloves, minced
3 cups Bone Broth
1 cup Orzo (or Risoni)
¼ tsp Salt
Pinch Pepper
200g Wild Squid
¾ cup Peas
½ Lemon, juiced
2 tbsp Chives, finely chopped

Method

1.     In a large saucepan, melt one tablespoon of the butter.

2.     Add onion and one garlic clove and cook until softened.

3.     Add bone broth, orzo, salt and pepper to saucepan. Bring to a boil and cook for 6 minutes. Add the peas and cook for a further 2 minutes or until pasta is cooked. Drain and return to pan.

4.     Meanwhile, melt remaining two tablespoons of butter in a separate frying pan on a medium heat.

5.     Add the remaining three garlic cloves and wild squid, lightly panfry for a few minutes until squid is cooked through.

6.     Add squid to orzo and mix through. Stir through lemon and chives.

7.     Serve and enjoy!
