Cauliflower Pizza
Everyone loves pizza right!? I mean it’s just so delicious.
If you’re up for adding in some extra veg as well as avoiding a food coma
from all that bread then you have to try my cauliflower based pizza!
This recipe took a few goes to get right, but I finally got there!
I actually love how it leaves me feeling and it still tastes incredible if not better!

Ingredients
Base
1 Medium Cauliflower (approx. 400g)
2 Free-Range Eggs, beaten
2 tsp Dried Basil
1 tbsp Nutritional Yeast
½ cup Buckwheat Flour
½ tsp Salt
Toppings
¼ cup Tomato Paste
¼ can Cannellini Beans, rinsed & pat dried
¼ Red Onion, sliced
¼ Red Capsicum, sliced
3 Broccolini stalks, chopped
4 Cherry Tomatoes, sliced
1 tbsp Slivered Almonds
2 tbsp Goats Cheese
Method
1. Preheat oven to 180 degrees fan forced.
2. Use a blender to blitz cauliflower into a rice consistency.
3. Spread cauliflower evenly over a baking tray.
4. Bake in the oven for 15 minutes, tossing at the half way point.
5. Meanwhile, combine remaining base ingredients in a bowl.
6. Once, cauliflower rice is baked, remove from oven and use paper towel to thoroughly pat dry, removing as much moisture as possible.
7. Add cauliflower to the base mixture and stir through until combined.
8. Sandwich the dough mixture between two pieces of baking paper and with a rolling pin, roll to form a round pizza base to a 2mm thickness. Place back on tray, removing the baking paper that was used for rolling.
9. Return base to oven and bake for a further 15 minutes.
10. Meanwhile, prepare topping ingredients ready for placement.
11. Once base is cooked, remove from oven, spread with tomato paste, decorate with toppings and bake for a further 15-20 minutes.
