Cheesey Beef Brisket Nachos

Ingredients
Slow Cooked Brisket
~750g Beef Brisket
2 Garlic cloves, minced
1 cup Bone Broth or Vegetable Stock
½ cup Passata
1 tbsp Cumin
2 tsp Onion Powder
2 tsp Paprika
1 tsp Ground Coriander
Nachos
2 x 200g bag Corn Chips
1 x 300g jar Salsa (or make your own!)
2 cups Tasty Cheese, grated
1 Lime, cut into wedges
1 Jalapeno Chili, sliced
½ Avocado, mashed
½ cup Sour Cream
Coriander Leaves, to serve
Method
Slow Cooked Brisket Method
1. Add all brisket ingredients to a slow cooker and cook on low for 6-8 hours. During cooking, rotate half way if possible.
Nachos Method:
1. Preheat oven to 200 degrees and prepare a baking tray.
2. Spread out corn chips and spoon salsa on top. Sprinkle with cheese and bake for 10-12 minutes or until cheese has melted.
3. Serve nachos hot topped with slow cooked brisket, lime wedges, jalapenos, avocado, sour cream and fresh coriander leaves.
