Chocolate Oat Banana Bread
A classic with a twist, I just adore the texture of this bread, the chocolate melts in your mouth and the oats provide satiety keeping you fuller for longer! I will definitely be making this one on a regular basis!
Servings: 10 Slices
Ingredients
1 cup GF Rolled Oats
1 cup Buckwheat Flour
½ cup Dark Chocolate Chips
¼ cup Sweetener (I used Rapadura Sugar)
2 tbsp Cacao Powder
2 tsp Baking Powder
2 Free-Range Eggs
3 Bananas (over-ripe are best), mashed
¼ cup Unsweetened Plant Milk (I used Soy)
1 tsp Vanilla Extract
Method
1. Preheat oven to 180 degrees.
2. Combine the dry ingredients in a bowl (oats, flour, choc chips, sweetener, cacao and baking powder).
3. Whisk eggs in a separate bowl and then add remaining ingredients (banana, milk and vanilla) and combine.
4. Stir the wet ingredients into the dry mixture and combine.
5. Pour into a greased loaf tin and sprinkle with additional oats, choc chips or an extra banana (optional).
6. Bake for 45 - 60minutes, or until a skewer comes out clean.
