Christmas Prawn Cocktails

These lettuce leaf cocktails just bring a little bit extra delicious festive spirit.

Ingredients
200g Cooked Prawns, peeled
¼ cup Fresh Parsley, finely chopped
1 Spring Onion, finely sliced
2 tbsp Creme Fraiche
1 tbsp Mayonnaise
¼ Lemon, zest and juice
Pinch Salt
4 Cos Lettuce Leaves
Method
1. In a bowl combine crème fraiche, mayonnaise, lemon and salt.
2. Stir through prawns coating with sauce.
3. Serve prawns on top of cos lettuce leaves and sprinkle fresh parsley and spring onion.
