Cinnamon Scrolls

There’s nothing quite like the smell of freshly baked cinnamon scrolls.
Aren’t they just so cozy, warm and inviting!?

I was thrilled to create this recipe, particularly being gluten free, I’ll be honest it took a few goes to get this one correct, but we got there.
Gluten Free Cinnamon Scrolls Heaven here we come!

 
 

Servings: 10-12

Ingredients

Scrolls:
4 cups GF Plain Flour
¼ cup Coconut or Rapadura Sugar
2 ¼ tsp Instant Yeast
Pinch Salt
1 1/3 cup milk
½ cup Grass-Fed Butter (or Coconut Oil)
1 Free Range Egg

Filling:
1/3 cup Grass-Fed Butter (or Coconut Oil), melted
½ cup Coconut or Rapadura Sugar
2 tbsp Cinnamon 

Topping:
1 cup Fine Sugar (like icing sugar, I used Monk Fruit,
or blitz coconut/rapadura with 3 tsp tapioca flour in a blender until fine)
¼ cup Grass-Fed Butter (or Coconut Oil), melted
½ tsp Vanilla Extract

Method

1.     Add 2½ cups flour, sugar, yeast and salt to a blender.

2.     Separately, melt butter and stir through milk. Add to blender along with the egg. Blitz until ingredients are combined, slowly add remaining flour half a cup at a time.

3.     Generously flour a surface and knead dough for 10-15 minutes or until dough is smooth (sprinkle flour as needed if mixture is sticky).

4.     Place the ball of dough in an oiled bowl, cover and leave on the bench to rise for 1 hour.

5.     Meanwhile, combine sugar and cinnamon in a bowl.

6.     Once dough has risen, generously flour a surface and roll out dough into a large rectangle (roughly .5m in thickness).

7.     Spread butter on top of the rolled-out dough and sprinkle with sugar and cinnamon until the dough surface is covered.

8.     Roll dough from the longest side away from you, to form a tight roll. Pinch the dough together when it meets at the end.

9.     Use a sharp knife to cut 10-12 equal portions. Place portions on a greased or lined tray (or I used my French oven).

10. Cover and allow to rise/expand for a further hour on the bench.

11. Preheat oven to 180 degrees and bake for 30-35 minutes or to your desired texture.

12. Whip topping ingredients (sugar, butter and vanilla) until combined. Spread over scrolls and enjoy warm!
