Coconut Lime Slice
If you’re a sucker for citrus or a classic lemon slice… then you HAVE to try my coconut LIME slice! Full of zest your tastebuds will love this one.

Ingredients
Base
¼ cup Extra Virgin Coconut Oil, melted
¼ cup Maple Syrup
2 Free-Range Eggs, whisked
1 ¾ cup Almond Meal
½ tsp Baking Powder
Juice of ½ Lime
Zest of ½ Lime
Top
½ cup Shredded Unsweetened Coconut
Juice of ½ Lime
Zest of ½ Lime
Method
Preheat oven to 180 degrees conventional and prepare a 20 x 20cm baking tin.
Using a spoon combine all base ingredients in a bowl.
Spread mixture evenly into tin.
In a separate bowl, combine all topping ingredients and sprinkle evenly over base.
Bake for 18-20 minutes or until coconut is lightly browned.
