Ingredients
Brownie
1 Free-Range Egg
¼ cup Unsweetened Almond Milk
2 tbsp Grass-fed Butter, melted
2 tbsp Coconut Sugar
1 tsp Vanilla Extract
¼ cup Cacao Powder
1/8 tsp Salt
1 tsp Baking Powder
1 cup Almond Flour
¼ cup Dark Chocolate Chips
Filling:
1 cup Cashews
¼ cup Coconut Cream
1 ½ tsp Cacao Powder
1 tsp Maple Syrup
Method
1. Preheat oven to 180 degrees fan forced.
2. Blend all brownie base ingredients in order as listed except for choc chips until combined.
3. Fold through choc chips.
4. Pour mixture evenly into a small loaf tin.
5. Bake for 18-20 minutes or until cooked through.
6. Leave in tin for 10 minutes before removing.
7. Meanwhile, blend all filling ingredients into a smooth consistency.
8. Cut brownie in half lengthways and spread with filling mixture. Top with the other half of brownie, forming a sandwich. Cut into bite sized portions and serve.
