Nutty Baked Banana Oatmeal
If you like breaky on the go, then this is for you! Yes this does involve some meal prep (perhaps a quick sunday bake) but it’s going to set you up for the week!
I enjoy this oatmeal alongside some creamy yoghurt, it’s seriously very indulgent… almost like eating cake for breakfast!
Servings: 6
Ingredients
2 Bananas
2 Free-Range Eggs
¾ cup Unsweetened Almond Milk
¼ cup Extra Virgin Coconut Oil
1 ½ tbsp Rice Malt Syrup
1 tsp Vanilla Extract
1 tsp Cinnamon
¼ tsp Salt
2 cups GF Rolled Oats
½ cup Walnuts, roughly chopped
To Serve:
100g (or 1/3 cup) Unsweetened Coconut/Greek
Yoghurt
Method
1. Preheat oven to 180 degrees conventional.
2. Blend all ingredients except for oats & walnuts until smooth.
3. Stir through oats & walnuts.
4. Pour into a loaf tin (I used a 20cm x 10cm tin).
5. Bake for 30 - 35 minutes.
6. Serve with yoghurt.
Hint
I like to freeze my leftovers and defrost as desired, so handy!
