Chocolate Brazil Nut & Oat Granola
Who wouldn't want to start their day with chocolate!?
Cacao is full of amazing healing properties and pairs perfectly with brazil nuts which are packed with selenium. This is fantastic for immunity, healing oxidative stress and cognitive function, making it perfect for breaky time!
Servings: 8 - 400g. Serving size 50g (approx. ½ cup)
Ingredients
¼ cup Extra Virgin Coconut Oil
2 tbsp Sweetener (I used Coconut Sugar)
1 tbsp Cacao Powder
2 cups Coconut Flakes
1 cup Raw Brazil Nuts, roughly chopped
½ cup GF Rolled Oats
¼ cup Sunflower Seeds
¼ cup Flaxseeds
To Serve:
100g (or 1/3 cup) Unsweetened Coconut/Greek Yoghurt
/Milk

Method
Preheat oven to 180 degrees fan forced.
Heat a small saucepan on a low heat.
Add coconut oil, sweetener and cacao powder. Stir and remove from heat once combined.
Meanwhile, combine all remaining ingredients except for flaxseeds in a bowl.
Pour chocolate mixture over dry ingredients whilst tossing.
Spread evenly on baking tray.
Bake for 8 minutes, using a spatula toss granola. Bake for a further 2-4 minutes.
Once cool, stir through flaxseeds and store in a jar.
Serve with yoghurt/milk & fruit.
