Coconut & Lime Chia Pudding

 

I love going to sleep knowing that when I wake up a delicious and healthy chia pudding is waiting for me!

You can never go wrong with coconut & lime, so why not add that combo to a chia pudding!? This one is perfect for warm mornings or if you are just a busy bee.

Coconut & Lime Chia Pudding

Servings: 1

Ingredients

3 tbsp Chia Seeds
1 cup Unsweetened Coconut Milk
1 tsp Sweetener  (eg. honey, maple, rice malt syrup)
¼ Lime, juiced
3 tsp Desiccated Coconut
2 tbsp Nuts (I used pecans)
¼ cup Fruit (blueberries are delicious)
1 tbsp Coconut Flakes

Method

1.     Combine chia seeds, milk, sweetener, lime & desiccated coconut in a jar, stir well. 

2.     Cover and place in fridge to soak overnight.

3.     Top with nuts, fruit & coconut flakes.
