Crispy Oat Tofu Nuggets
This recipe was so much fun to develop!
I used GF Oats to create a crispy golden coating, which made the tofu nuggets have a beautiful texture & of course made them super tasty!
Paired with homemade dipping sauces (natural bbq or greek yoghurt & lemon dill) you are in for a healthy surprise!
Servings: 2
Ingredients
200g Firm Tofu, cubed
1 tbsp Extra Virgin Coconut Oil
Batter
¼ cup Unsweetened Plant-Based Milk (I used Almond Milk)
¼ cup Buckwheat Flour
1 tsp Apple Cider Vinegar
Crumb
1/3 cup GF Rolled Oats
1 tbsp Nutritional Yeast
1 tsp Cumin
1 tsp Onion Powder
½ tsp Garlic Powder
Pinch of Salt
Pinch of Pepper
Method
Lightly blitz crumb ingredient in a blender until combined.
Combine crumb mixture and batter in two separate bowls.
Coat tofu pieces in batter and then proceed to coat in crumb mixture and set aside.
Heat oil in a medium frying pan on a medium heat.
Add tofu and cook until browned on all sides, approximately 5 minutes.
Serve tofu nuggets alongside dipping sauces.
Natural BBQ Sauce
Servings: 250ml
Ingredients
½ tsp Extra Virgin Olive Oil
1 Garlic Clove, minced
½ cup Water
1/3 cup Tomato Paste
1 tbsp Coconut/Rapadura Sugar
1 tbsp Apple Cider Vinegar
1 tsp Cacao Powder
Salt & pepper, to taste
Method
1. Heat oil in a small saucepan on a low heat.
2. Add garlic and cook until fragrant, approximately 1 minute.
3. Add remaining ingredients and cook for a further few minutes or
until ingredients are combined and warmed.
4. Jar and allow to cool.
GREEK YOGHURT &
LEMON DILL DRESSING
Servings: 250ml
Ingredients
400g Greek Yoghurt
½ Lemon, juice & rind
1 tbsp Extra Virgin Olive Oil
1 tbsp Dill, chopped
Salt & pepper, to taste
Method
1. Combine all ingredients.
2. Store in a jar.
Hint: Store sauces in fridge & use within 1 week.
