Mango, Potato & Brazil Nut Salad
This combination might take you by surprise!
But my goodness, it is deeee- licious!
I absolutely adore mango… so any excuse to add it in right!? It actually pairs really well in a salad.
I have included Brazil Nuts as they are a rich source in selenium. Which plays an essential role in metabolism, thyroid health and assists in protecting the body against oxidative stress.

Ingredients
Extra Virgin Olive Oil
2 Potatoes, diced
1 tsp Garlic Powder
1 tsp Italian Herbs
1/3 cup Brazil Nuts, roughly chopped
2 handfuls Salad Leaves
1 Mango, diced
½ Avocado, diced
2 tbsp Sunflower Seeds
Dressing
2 tbsp Extra Virgin Olive Oil
1 tbsp Apple Cider Vinegar
Method
1. Preheat oven to 200 degrees and prepare a baking tray.
2. Toss potato in oil, garlic and herbs.
3. Spread out on baking tray and bake until tender, approximately 20 minutes.
4. In the last 5 minutes of cooking add nuts to pan and cook until browned.
5. Meanwhile, combine dressing ingredients in a small bowl.
6. Place cooked potatoes, nuts and remaining salad ingredients in a large bowl and drizzle with dressing.
