Coconut Meatball Curry ft. Cosmic Cookware
I love a quick curry of a weak night, yes this does take an extra few minutes to make the meatballs but I promise the effort is well worth it!
The coconut curry combo is seriously delicious, you will definitely be going back for seconds.

Time to make the meatballs, featuring grass-fed mince.
Rolled into balls and quickly browned with sliced onion in our cosmo pan.
Next we add the delicious coconut curry sauce!
We get that bubbling amongst the veggies, the cosmo pan does this so well by regulating heat through it’s sophisticated layers.
The meatballs deliciouslessy soak up that coconuty curry flavour.
Served with some basmati rice and fresh parsley.
This recipe has quickly become one of my all time favourites. I love that the cosmo pan has a high lip,
making it versatile for frying yet also curries!

Ingredients
½ Onion, sliced
8 Green Beans, cut into thirds
8 Cherry Tomatoes, halved
1 Carrot, julienned
Meatballs
1 tbsp Extra Virgin Olive Oil
250g Grass-Fed Beef Mince
1 Garlic Clove, minced
1 Free-Range Egg, beaten
¼ cup Flaxseed Meal
2 tbsp Parsley, finely chopped
½ Onion, finely diced
½ tsp Salt
Pinch of Pepper
Coconut Curry Sauce
1 Garlic Clove, minced
1 tsp Curry Powder
1 x 400ml can Coconut Cream
1 tsp Bone Broth (optional)
½ cup Passata
1 tsp Chilli Flakes
To Serve
1 cup Cooked Basmati Rice
Fresh Parsley, to serve
Method
1. Add all meatballs ingredients, except for oil to a bowl and mix until combined.
2. Measure out two tablespoons per meatball and roll into balls.
3. Combine coconut curry sauce ingredients in a bowl or jug and set aside.
4. Heat oil in pan on a medium heat. Add sliced onion and fry meatballs until lightly browned on each side approximately 5 minutes. Add coconut curry sauce, carrots, green beans and cherry tomatoes, cook until vegetables have softened.
5. Serve rice topped with coconut curry meatballs and fresh parsley.
