Creamy Cucumber Carrot Rolls

Carrot and cucumber sticks have always been a go to snack of mine, add some dip and I’m set! SO what if we combine them together with a creamy avo/greek yoghurt spread combo!?

This recipe is in collaboration with snackables featuring their mini carrots, pick some up today and try this DELISH combo for yourself! These are quick and easy and sure to be a crowd pleaser

 
 

Servings: 4 as part of a platter

Ingredients

½ Avocado, mashed

2 tsp Greek Yoghurt

½ Lemon, juiced

Fresh Herbs, roughly chopped (I used Parsley)

Pinch Salt

1 Cucumber, peeled

250g Snackable Carrots

 
 

Method

  1. Combine avocado, Greek yoghurt, lemon, herbs and salt in a bowl (or blitz in a blender). 

  2. Spread mixture on top of a peeled cucumber. Place a carrot at one end and wrap towards the other end, so the cucumber is curling/wrapped around the carrot.

  3. Dip in any left over spread and ENJOY!!
