Crispy Rice Toppers

Crispy rice is a game changer, the texture is everrrrything!
Get creative with your favourite toppings, below you will find the delicious combo I used. I love Japanese food and whipping this up was super quick and easy. It’s always a good idea to cook some extra rice and this is the perfect way to use up leftovers! Did you know that cooked and cooled rice is amazing for our gut microbiome - this is due to resistance starch!

Servings: 2

Ingredients

1 cup Cooked Sushi Rice

Toppings (feel free to get creative!)
½ Avocado, mashed
125g tin Tuna, drained
½ Lime, juiced
1 tbsp Mayonnaise
1 tbsp Chives, finely chopped
1 tsp Tamari
1 tsp Sesame Oil
1 tsp Black & White Sesame Seeds
¼ tsp Chilli Flakes
Tabasco, drizzled

 
 

Method

1.     Heat oil in a medium frying pan, add squished portions of rice to the pan (I used a heaped tablespoon). Flip once golden and fry the opposite side.

2.     Add toppings as desired. I topped with avocado, tuna, lime juice, mayo, chives, tamari, sesame oil, sesame seeds, chilli flakes and tabasco.
