Grilled Haloumi, Eggplant & Mackerel Wraps

Ingredients
¼ cup Chickpea Couscous
Extra Virgin Olive Oil, drizzled
½ Eggplant, cut into thin ½ cm rounds
50g Haloumi, cut into strips
1 Organic Coconut Wrap
1 tbsp Basil Pesto
1 tsp Wholegrain Mustard
60g Mackerel
3 Sundried Tomatoes, chopped
1 tbsp Mayonnaise
1 handful Leafy Greens
Salt & Pepper, to taste
Method
1. Cook chickpea couscous as per packet instructions and set aside.
2. Heat a large grill/frying pan and drizzle with oil.
3. Add eggplant and haloumi and cook until eggplant has softened and haloumi has browned (add more oil if required when flipping).
4. Spread wrap with pesto and wholegrain mustard.
5. Top with prepared couscous, eggplant and haloumi.
6. Add mackerel, sundried tomatoes, mayonnaise and leafy greens.
7. Season to taste and enjoy!
