Lettuce Tacos
LET US TACO I say!
This is a big favourite in my household, we just adore the crunchy texture that the lettuce leaves give the dish. Overall, I find the meal very satisfying and refreshing.
Many pre-mixed taco spices that are conveniently
grabbed from the supermarket have a heap of additives such as anti caking agents, food acids & unnecessary flours.
Fortunately, we can stock our pantry with beautiful spices, and season the meat yourself.
It seriously takes 30 seconds, tastes amazing and you actually know what you are putting in your body!

Ingredients
Filling
250g Grass-Fed Beef Mince Meat
½ Red Onion
½ tsp Garlic Powder
2 tsp Cumin
2 tsp Paprika
½ tsp Cayenne Pepper
½ tsp Salt
1 tsp Extra Virgin Olive Oil
1 Carrot, grated
Salsa
1 Tomato, diced keeping juice
¼ Red Onion, sliced
¼ Red Capsicum, diced
½ tsp Lime Juice
Chilli, to taste (if you like it hot!)
To Serve
1 Large Iceberg Lettuce (lettuce leaves separated)
60 grams Goats Fetta (2 heaped tbsp)
Method
1. Sauté onion in a medium saucepan on medium heat until softened.
2. Add mince and cook until browned, add spices and stir through.
3. Remove from heat and stir through carrot.
4. Prepare salsa by combining all ingredients in a bowl.
5. Serve filling in a lettuce cup, top with salsa & fetta.
