Mexican Oat Bowl

 

Yes you read that right! Mexican Oats!
I have been toying with the idea of creating this recipe and wow I am so glad I did! Savoury oats are seriously yummy! Think of it like a substitute for rice, the spice brings that flavour bang and the toppings tie everything together. Enjoy!

Mexican Oat Bowl

Servings: 2

Ingredients

1 tsp Extra Virgin Olive Oil
1/2 Red Onion, sliced 
1 Garlic Clove, minced
1 cup GF Rolled Oats 
2 cups Water 
1 tsp Cumin
1 tsp Paprika
½ tsp Salt
¼ tsp Cayenne Pepper
½ x 400g can Lentils, drained & rinsed
½ cup Cheese, grated (for Dairy Free/Vegan replace 
     with Nutritional Yeast) 

Toppings: 
1/3 cup (or 125g can) Corn Kernels
1 Carrot, grated
½ Avocado, sliced
4 Cherry Tomatoes 
2 Lettuce Leaves, chopped
½ Lime, halved
2 tbsp Coriander 

Mexican Oat Bowl


Method

1.     Heat oil in a medium saucepan on medium heat.

2.     Add onion and garlic, sauté until softened, approximately 2 minutes. 

3.     Add in oats, water and spices and cook until liquid thickens, approximately 5-7 minutes.

4.     Stir through lentils and taste to ensure spice is to your liking. 

5.     Stir through cheese (or nutritional yeast) and cook for a further minute allowing it to melt. 

6.     Divide between two bowls and add toppings (corn, carrot, avocado, tomato, lettuce, lime and coriander). 

7.     Enjoy!
