Loaded Sweet Potato with Hommus & Cherry Tomatoes

Yes, I could happily spread hommus on anything!

These are my Loaded Sweet Potatoes with Hommus & Cherry Tomatoes featuring a collaboration with my fave hommus brand @sssfoods

Servings: 2

Ingredients

2 Sweet Potatoes, cut in half & pierced with a fork
1 tsp Extra Virgin Olive Oil
1 Garlic Clove, diced
½ cup Cooked Lentils
8 Cherry Tomatoes, sliced
½ tsp Paprika
Salt & Pepper, to taste
¼ cup SSS Foods Hommus - Natural
1 tbsp Chives, finely chopped
¼ cup Fresh Parsley, finely chopped
1 tbsp Natural Yoghurt

 
 

Method

1.     Preheat oven to 180 degrees fan forced.

2.     Lightly coat sweet potato with olive oil and bake for 30 minutes, flipping after 15 minutes.

3.     Meanwhile, heat olive oil in a medium frying pan on a medium heat.

4.     Add garlic to pan and cook until fragrant, approximately 2 minutes.

5.     Add lentils, cherry tomatoes and paprika to pan. Cook for a further 5 minutes or until cherry tomatoes have softened.

6.     Turn off the heat and stir through hommus and chives.

7.     Once sweet potato is cooked, top with cherry tomato and hommus mixture.

8.     Serve with fresh parsley and yoghurt.
