Almond Satay Beef Noodles

I am an absolute sucker for satay sauce and I love the twist in this recipe of using almond butter as a delicious sauce base.
Twirl your fork through these thick udon noodles and enjoy the tender grass-fed beef strips from my monthly butcher box from Butcher Crowd.

 
Almond Satay Beef Noodles
 

Servings: 2

Ingredients

200g Udon Noodles
1 tsp Extra Virgin Olive Oil
250g Grass-Fed Stir-Fry Beef
½ Broccoli, cut into florets
1 Bok Choy, roughly chopped
1 Red Capsicum, sliced
1 Spring Onion, sliced
2 tsp Sesame Seeds
Salt & Pepper, to taste  

Almond Satay Sauce
1/3 cup Almond Butter
¼ cup Tamari
2 tbsp Water
1 Garlic Clove, minced
1 Lime, juiced
½ a Chilli, optional

Method

1.     Cook noodles as per packet instructions and set aside.

2.     Blitz satay sauce ingredients in a blender and set aside (alternatively combine in a bowl).

3.     Heat olive oil in a wok on a medium heat.

4.     Add beef, cooking until partially browned, approximately 2 minutes.

5.     Add broccoli and cook for a further 2 minutes.

6.     Add bok choy and capsicum and cook for a further minute.

7.     Stir through satay sauce, drained noodles, spring onion and sesame seeds. Once heated proceed to serve.
