Roast Cherry Tomato & Basil Soup

Roast Cherry Tomato & Basil Soup
 

Servings: 4

Ingredients

1 Onion, sliced
2 Garlic Cloves, minced
2 punnets (500g) Cherry Tomatoes
1 Carrot, diced
2 tsp Extra Virgin Olive Oil
2 tsp Dried Basil
1 tsp Dried Oregano
Pinch Salt & Pepper
4 cups (1 litre) Bone Broth or Vegetable Stock
½ cup Red Lentils
2 tbsp Tomato Paste
4 Fresh Basil Leaves
1/3 cup Coconut Cream

Method

1.     Preheat oven to 180 degrees.

2.     Add onions, garlic, cherry tomatoes and carrot to a French oven. Drizzle with oil, sprinkle dried basil and oregano and season with salt and pepper. Bake for 20-25 minutes or until tomatoes have softened.

3.     Place French oven on stove top and add broth, lentils, tomato paste and basil leaves. Allow to simmer for 15-20 minutes or until red lentils have softened.

4.     Use a hand blender to blitz soup to a smooth consistency.

5.     Stir through coconut cream and cook for a further two minutes. 

6.     Serve and garnish with extra basil leaves.
