Roasted Pumpkin & Feta Pasta

Pumpkin and Feta combine in this recipe to create a rich, creamy base.
This sauce is filled with herbs that give a large range of flavour to this dish. Roasted pumpkin and feta
soften beautifully to mix through your favourite pasta!

 
Roasted Pumpkin & Feta Pasta
 

Servings: 2

Ingredients

250g San Remo Pasta
2 cups Pumpkin, cubed ⁠
100g Feta⁠
1 Garlic Clove, minced ⁠
½ tsp Oregano ⁠
½ tsp Thyme ⁠
½ tsp Onion Powder⁠
¼ tsp Salt⁠
Pinch of Pepper⁠
½ tsp Turmeric⁠
½ cup Bone Broth or Vegetable Stock, warmed

 

 
Pasta with pumpkin and Feta
 

Method

1.            Preheat oven to 200 degrees.⁠

2.            Spread pumpkin, feta and garlic on a baking tray.⁠

3.            Sprinkle herbs, season and drizzle with oil. Bake until tender, approximately 20-25 minutes. ⁠

4.            Meanwhile cook pasta as per packet instructions. ⁠

5.            Stir through broth, roasted pumpkin and feta.⁠

6.            Serve and enjoy!⁠
