Roasted Pumpkin & Feta Pasta
Pumpkin and Feta combine in this recipe to create a rich, creamy base.
This sauce is filled with herbs that give a large range of flavour to this dish. Roasted pumpkin and feta
soften beautifully to mix through your favourite pasta!

Ingredients
250g San Remo Pasta
2 cups Pumpkin, cubed
100g Feta
1 Garlic Clove, minced
½ tsp Oregano
½ tsp Thyme
½ tsp Onion Powder
¼ tsp Salt
Pinch of Pepper
½ tsp Turmeric
½ cup Bone Broth or Vegetable Stock, warmed
Method
1. Preheat oven to 200 degrees.
2. Spread pumpkin, feta and garlic on a baking tray.
3. Sprinkle herbs, season and drizzle with oil. Bake until tender, approximately 20-25 minutes.
4. Meanwhile cook pasta as per packet instructions.
5. Stir through broth, roasted pumpkin and feta.
6. Serve and enjoy!
