Coconut & Vanilla Bean Protein Bars

I love a good protein bar and nothing beats homemade.
If you have ever read a label of a store bought protein bar, you will know that most are often full of rubbish ingredients and are so far removed from real food.

That’s why I looove to make my own with good quality protein powder like this Pure Vanilla Bean Protein Powder from Aus Natural Protein Company.

 
Coconut & Vanilla Bean Protein Bars
 

Servings: 8-10

Ingredients

4 Medjool Dates, pitted & roughly chopped
¾ cup Rolled Oats
1/3 cup Pure Vanilla Bean Protein Powder
1/3 cup Desiccated Coconut
2 tbsp Coconut Butter
2 tbsp Water

Toppings
2 tbsp Coconut Butter, melted 
½ tsp Coconut Oil, melted

Method

1.     Preheat oven to 180 degrees. 

2.     Pulse all ingredients together in a blender until combined.

3.     Press mixture into a lined brownie tin, use the back of a spoon to press down (it may be sticky). 

4.     Bake for 8-12 minutes or until lightly browned. Allow to slightly cool.

5.     Meanwhile, combine topping ingredients in a small bowl. 

6.     Drizzle with coconut butter and cut into bars.

7.     Store in a container and enjoy.
