Mushroom & Broccolini Omelette

 

I love a good omelette that is full of veggies! 
They are so fantastic to use up old veg 
before buying fresh produce.
Let’s normalise eating veggies for breakfast yes!?

Mushroom & Broccolini Omelette

Servings: 1

Ingredients

1 tsp Grass-Fed Ghee
1 tbsp Red Onion, diced
1 Stalk Broccolini, roughly chopped
1 tbsp Capsicum, diced
1 Flat Mushrooms thinly sliced 
4 Cherry Tomatoes, halved
1 handful Spinach 
2 Free-Range Eggs, whisked. 
30g (1 heaped tbsp) Goat’s Feta

Method

1.     In a small frying pan, melt ghee on medium heat. 

2.     Sauté red onion for 30 seconds. 

3.     Add broccolini & red capsicum, sauté for 1 minute. 

4.     Add mushrooms and tomatoes, sauté for 1 minute.

5.     Add spinach until leaves softened. 

6.     Pour eggs over vegetables. 

7.     Once browned underneath, fold omelette in half. 

8.     Gently cook for a further minute. 

9.     Serve and sprinkle with goats cheese.
