Green Breaky

I used to think it was a little strange to have vegetables at breakfast time, but I have definitely come around! 
I call this my green breaky and it’s standard in my house. You know the saying “you gotta eat your greens” but why???
Think… 
Glowing Skin.
Luscious Hair.
Lots of Energy.
Weight Management.
And so so so much more!

Most importantly, after eating this breaky I feel great, am always satiated until lunch time and don’t feel the need to snack. As opposed to some high GI toast which would make my stomach start rumbling 30 mins later!

Green Breakfast

Servings: 1

Ingredients

1 tsp Extra Virgin Coconut Oil 
3 Brussel Sprouts, quartered lengthways
2 stalks Broccolini
½ a handful of Kale
1 Free-Range Egg
4 Snow Peas
1/4 cup Chickpeas
1 handful Spinach
30g Goat’s Feta (1 heaped tbsp)
Salt & Pepper 

Method

1.     Melt oil in medium frying pan on a medium heat.

2.     Add brussel sprouts to pan and cook until they start to brown. 

3.     Add broccolini & kale to pan. 

4.     Start cooking your egg to your preferred cooking method. 

5.     Add snow peas to pan and toss for a further minute. 

6.     Add chickpeas and spinach. Sauté until spinach has wilted.

7.     Serve greens, top with egg and sprinkle with goats cheese.
