Mackerel Fish Tacos

This recipe features wild caught mackerel from my fave butcher box delivery service Butcher Crowd, mackerel is a fantastic omega 3 rich fatty fish, which is amazing in decreasing inflammation.

Ingredients

1 tbsp Buckwheat Flour
½ tsp Ground Coriander
1/8 - ¼ tsp Cayenne Pepper (depending on your spice 
tolerance)
1 tsp Extra Virgin Coconut Oil
250g Mackerel Fish Fillets
2-4 Corn Tortillas 

Salsa
6 Cherry Tomatoes
¼ Red Capsicum, diced 
½ tsp Lime Juice 
1 Red Chilli, sliced (optional)

Toppings
1 Carrot, grated
½ bunch Coriander Leaves
1 Spring Onion, diced

 
Mackerel Fish Tacos
 

Method

1.     Combine flour & spices in a small bowl.

2.     Place fish into bowl and coat with mixture. 

3.     Heat oil in a medium frying pan on a medium heat. 

4.     Cook fish until lightly browned (ensuring to flip halfway to brown opposite side). 

5.     Chop fish into strips and set aside. 

6.     Meanwhile combine all salsa ingredients in a small bowl and set aside. 

7.     Serve fish on top of tortilla with salsa and toppings.
