Marinated Steak with Lemon Garlic Zucchini Ribbon Skewers

Taking the time to marinate a steak is SO worth it, the flavours are incredible, the steak is so tender and literally melts in your mouth.

Marinated Steak with Lemon Garlic Zucchini Ribbon Skewers
 

Servings: 2

Ingredients

2 Grass-Fed Striploin Steaks
Extra Virgin Olive Oil, drizzled
1 Zucchini, peeled into ribbons
½ Lemon, juice & zest
1 Garlic, minced
Salt & Pepper, to taste

Marinade
2 Garlic Cloves, minced
2 tbsp Extra Virgin Olive Oil
2 tbsp Tamari
¼ Lemon, juiced
2 tsp Italian Seasonings
¼ tsp Salt
Pinch Pepper

Method

1.     Mix all marinade ingredients in a container and add the steak, coating with marinade. Place in the fridge and allow to marinade overnight (or less if strapped for time).

2.     Bring steak to room temperature and cook in an oiled grill/frying pan to your liking.

3.     Meanwhile, skewer zucchini ribbons onto skewers.

4.     Heat a frying pan and drizzle with oil, add garlic and skewers. Squeeze lemon juice and sprinkle lemon zest on top of skewers. Cook until garlic is browned and zucchini has heated through.  Serve and scoop up any leftover garlic and lemon in the pan and top the zucchini skewers.

5.     Serve marinated steak alongside zucchini ribbon skewers and enjoy!
