Mushroom Medley
I feel like mushrooms are very vogue right now & I am all for it!
Mushrooms are fantastic for:
-Antioxidants & Immunity (full of selenium!)
-B-Vitamins (helping to provide energy & supporting the nervous system)
-Vitamin D (think calcium absorption & strong bones)
Servings: 2
Ingredients
1 ½ cups Sweet Potato, cubed
1 tbsp Extra Virgin Olive Oil
Salt, seasoned
400g Mixed Mushrooms, sliced (I used shitake, shimeji, black fungi & oyster)
4 Chinese Broccoli Stalks
½ can of Lentils, drained & rinsed
Dressing
2 tbsp Flaxseed Oil
Method
1. Preheat oven to 200 degrees fan forced and prepare a baking tray.
2. Toss sweet potato in a bowl with half the olive oil, season with salt and evenly spread out on baking tray.
3. Bake for 15-20 minutes or until tender.
4. Using the left over olive oil, panfry remaining ingredients on a medium heat until tender approximately 5 minutes.
5. Serve and drizzle with flaxseed oil.
