Nutty Lamb Tacos
The crunch in these tacos really take it to the next level. Packed with healthy fats, this is a flavour combo you’re going to want to try.

Ingredients
Extra Virgin Olive Oil, drizzled
1 Onion, diced
2 Garlic Cloves, minced
1 Green Chilli, diced
500g Pasture Raised Lamb Mince
1 tsp Cumin
1 tsp Cinnamon
1 tsp Ground Coriander
Generous Pinch Salt & Pepper
1 tbsp Walnuts, finely chopped
1 tbsp Pecans, finely chopped
1 tbsp Hazelnuts, finely chopped
2 tsp Honey
Toppings
2-4 Corn Tortillas
3 tbsp Tzatziki
2 tbsp Pomegranate Seeds
Fresh Mint, to serve
Method
1. Heat a medium frying pan on a medium heat and drizzle with oil.
2. Add onion, garlic and chilli to pan, cooking until softened.
3. Add lamb mince, breaking it up with a wooden spoon.
4. Once lightly browned, add cumin, cinnamon, ground coriander, salt and pepper. Cook until the meat is coated and browned.
5. Add the walnuts, pecans, hazelnuts and honey. Stir through, cooking for a further couple of minutes.
6. Top each tortilla with nutty lamb mince, tzatziki, pomegranate seeds and fresh mint leaves.
