Pork Okonomiyaki

This was one of my favourite foods in Japan, this savoury pancake is super quick to whip up. I have included delicious pork for additional protein and yumminess.

Pork Okonomiyaki
 

Servings: 2

Ingredients

250g Pasture Raised Pork Mince
¼ White Cabbage
2 Spring Onion, finely sliced
1 Free-Range Egg
¾ cup Flour (I used Spelt)
2 tbsp Bone Broth
1 tsp Salt
Pinch Pepper
Sesame Oil, to cook
BBQ Sauce & Mayonnaise, to serve
Nori Flakes, to serve
Extra Spring Onion, finely chopped to serve

Method

1.     Add pork, cabbage, spring onion, egg, flour, bone broth, salt and pepper in a large bowl until combined.

2.     Heat a frying pan, and drizzle with oil. Add half the mixture to the pan and form a large pancake shape with a spatula.

3.     Flip once browned on one side. Repeat with the remaining mixture.

4.     Serve topped with bbq sauce, mayonnaise, nori flakes and spring onion.
