Roast Lamb Nourish Bowl

I think I could eat this every day of my life. Literally so so yummy. To me this is the perfect lunch. Feel free to mix up the ingredients depending what you have available. Enjoy!

Roast Lamb Nourish Bowl
 

Servings: 2

Ingredients

Roast Lamb
Extra Virgin Olive Oil, drizzled
300g Pasture Raised Lamb Roast
1 Garlic Clove, minced
½ Lemon, juiced
¼ tsp Dried Rosemary
¼ tsp Dried Mint (if you have it)
¼ tsp Dried Thyme
Pinch Salt & Pepper

Nourish Bowl
½ cup Hommus
½ Lemon, juiced
8 Cherry Tomatoes, sliced
½ Red Onion, finely diced
¼ Cucumber, diced
2 tbsp Pomegranate Seeds
2 tbsp Fresh Mint Leaves, finely chopped
Goats Cheese, crumbled

Method

1.     Preheat oven to 180 degrees.

2.     In a baking dish, combine garlic, lemon, rosemary, mint, thyme, salt and pepper. Add lamb and coat with mixture.

3.     Bake for 30-35 minutes or until tender. Slice or pull once cooked.

4.     Meanwhile, in a bowl combine lemon, cherry tomatoes, red onion, cucumber, pomegranate and mint leaves.

5.     Plate each bowl with hommus, top with the other ingredients, roasted lamb and sprinkle with goats cheese.
