Slow Cooker Sausage Stew

Slow cooked sausages is seriously underrated. A cheap, nutritious and delicious meal. This one is perfect for the cooler months.

Slow Cooker Sausage Stew
 

Servings: 4

Ingredients

Extra Virgin Olive Oil, drizzled
1 Brown Onion, diced
2 Garlic Cloves
500g Grass-Fed Classic Beef Sausages
1L (4 cups) Bone Broth or Vegetable Stock
2 Carrots, diced
2 Potatoes, quartered
4 tbsp Tomato Paste
1 tsp Dried Thyme
1 tsp Dried Rosemary
Pinch Salt & Pepper
Fresh Parsley, chopped to serve
Rice, to serve

Method

1.     Preheat oven to 160 degrees.

2.     Heat a Dutch oven (cast iron or oven proof dish) and drizzle with oil.

3.     Add onion and garlic and cook until softened.

4.     Add sausages and cook until browned.

5.     Add broth, carrots, potatoes, tomato paste, thyme, rosemary, salt and pepper.

6.     Place in the oven with the lid on. Cook for 2.5 hours.

7.     Serve on rice, topped with fresh parsley.

Note This recipe can also be cooked on a stovetop for 45-60 minutes. Or in a slow cooker!
