Vanilla Bean Protein & Lemon Pancakes

 

A delicious flavour combination, these fluffy pancakes will definitely brighten your morning.
Topped with lemon and maple syrup, you are in for a treat.

Vanilla Bean Protein & Lemon Pancakes

Servings: 2

Ingredients

4 Free-Range Eggs
½ cup Milk (I used Almond Milk) 
1 tbsp Rice Malt Syrup
½ cup Buckwheat Flour
1/3 cup Organic Vanilla Bean Protein Powder
1 tsp Baking Powder
½ tsp Lemon Zest
¼ tsp Himalayan Salt 

Toppings:
Lemon juice and zest, walnuts & maple syrup. 

Vanilla & Lemon Pancakes

Method

1.      Separate eggs whites and yolks. 

2.     Beat egg whites & set aside.

3.     Beat egg yolks, milk and rice malt syrup.  

4.     In a separate bowl combine flour, protein powder, baking powder, zest and salt.

5.     Add egg yolk mixture to bowl and stir through until combined. 

6.     Gently fold in egg whites.

7.     Heat a medium frying pan on a low heat. 

8.     Drop spoonfuls onto greased pan and flip once browned.

9.     Once cooked, serve with toppings and enjoy.
