Baked Eggs in Avo

 

 I love this one for breaky, I usually do it on a weekend when I have little bit more time.
All you do is scoop out a bit of avo, crack in an egg & bake away.
Baked avocado goes super creamy, a must try!

Servings: 1

Ingredients

½ Avocado
1 Free-Range Egg
4 Cherry Tomatoes
Lemon or Lime Juice, to taste
Salt & Pepper to taste ⁠

Method

1.     Preheat Oven to 160 degrees fan forced.

2.     Using a spoon, scoop out avocado flesh leaving roughly a 5mm rim of avocado (Hint: This can be a little tricky, as it depends on the egg and avocado size, so adjust accordingly).

3.     Crack egg into centre of avocado.

4.     Gently place on a baking tray, add cherry tomatoes to the same tray.

5.     Bake for 15 minutes or until egg is to your liking.

6.     With remaining avocado, squeeze desired amount of lemon juice and season to taste.

7.     Serve and enjoy.
