Beetroot Hummus
I am all about the hummus life, I just can’t get enough.
If you’ve never made your own, it’s time!! SO much better for you & super easy.
For this version I added beetroot & the colour is just magical.
Servings: 4-6
Ingredients
1 400g can Chickpeas, drained & rinsed (or 230g dried
chickpeas soaked & cooked which becomes 1 ½ cups cooked)
3 small Beetroots, cooked
¼ cup Lemon Juice
¼ cup Tahini (well stirred)
1 Garlic Clove, minced
2 tbsp Extra Virgin Olive Oil
2 tbsp Water
½ tsp Cumin
¼ tsp Salt
Method
1. Blend all ingredients until smooth & serve.
