Blueberry Slice
This recipe turned out so much better than I hoped for! It’s light, fluffy & delicious.

Ingredients
12 Free-Range Eggs
100g Grass-Fed Butter, melted
1/3 cup Plant Milk (I used Almond Milk)
1 tsp Vanilla Extract
¼ cup Coconut Sugar
2 ½ cups Almond Flour
¼ tsp Salt
2 tsp Baking Powder
½ cup Blueberries
Method
1. Preheat oven to 180 degrees fan forced.
2. Add all ingredients to blender in order as listed, except blueberries.
3. Blend until smooth.
4. Stir through blueberries.
5. Pour mixture evenly into a tin (I used a 21.5cm x 9xcm loaf/slice tin).
6. Bake for 35 – 40 minutes or until browned.
