Broccoli Pesto with Spiralised Carrot

 

Time to make your own pesto full of nutritious ingredients including broccoli.
Top it on some spiralised carrot… light & refreshing!

Broccoli Pesto

Servings: 2

Ingredients

2 Large Carrots, spiralised 

Pesto (jar & refrigerate leftovers) 
1 cup Fresh Basil
1 cup Broccoli, chopped
3 tbsp Nutritional Yeast
½ cup Pine Nuts
½ cup Extra Virgin Olive Oil
2 Garlic Cloves
Salt & Pepper, to taste

Method

1.     Blend all pesto ingredients into a smooth consistency. 

2.     In a medium frying pan on medium heat, add carrot & 4 tbsp of pesto. Toss for 2 minutes or until heated through.
