Turkey Bolognese
I’ve whipped up this delicious turkey bolognese recipe & paired it with some yummy pulse spaghetti!

Ingredients
200g Pulse Pasta, prepared as per packet instructions
1 tsp Extra Virgin Olive Oil
1 Onion, finely chopped
1 Garlic Clove, minced
250g Turkey Mince
½ Eggplant, diced
½ Red Capsicum, diced
1 x 400g can Diced Tomatoes
½ cup Bone Broth
1 tsp Dried Basil
1 ½ tsp Tapioca Flour
Salt & Pepper, to taste
Nutritional Yeast, sprinkled if desired
Method
1. Heat oil in a medium saucepan on a medium heat.
2. Sauté onion & garlic until softened, approximately 2 minutes.
3. Add in mince and cook for a further 2 minutes.
4. Add remaining ingredients except for pasta and simmer for 10-15 minutes or until vegetables have softened.
5. Serve on top of pulse pasta and sprinkle nutritional yeast if desired.
