Butter Chicken Pasta
This pasta dish is an amazing fusion of flavours. Tender chicken with an assortment
of spices in a rich coconut cream sauce, this combined with the soft texture
of cooked pasta is a must try.

Ingredients
250g San Remo Penne Pasta
1 tsp Extra Virgin Olive Oil
½ Onion, finely chopped
1 Garlic Clove, minced
200g Free-Range Chicken Breast, cut into thin strips
¾ cup Bone Broth or Vegetable Stock
1½ tbsp Coconut Cream
1 Tomato, diced
2 tbsp Coriander
Spices
1 tsp Paprika
1 tsp Salt
½ tsp Garam Masala
½ tsp Cumin
¼ tsp Ground Coriander
¼ tsp Turmeric
¼ tsp Chilli
Method
1. In a small bowl, combine all spices and set aside.
2. Heat oil in a saucepan on a medium heat.
3. Sauté onion and garlic for 1 minute.
4. Add spices to pan, stirring for a further minute or until fragrant.
5. Add chicken, stock, coconut cream and tomato. Bring to the boil and then reduce heat. Simmer until chicken has cooked and
sauce has reduced, approximately 10 minutes.
6. Meanwhile, cook pasta as per packet instructions.
7. Add drained pasta to butter chicken and stir through.
8. Serve and garnish with coriander.
