Butter Chicken Pizza
So, I’m sure you’ve had butter chicken curry before. But how about putting it on pizza?
This recipe was made using Butcher Crowd’s Free Range, Pasture Raised Chicken
Trust me, butter chicken on pizza is a game changer!
Servings: 2
Ingredients
Pizza Base (alternatively use premade pita bread)
1 cup Chickpea Flour
½ cup Buckwheat Flour
½ tsp Salt
¼ cup Water
1 tbsp Natural Yoghurt
2 tbsp Extra Virgin Olive Oil
+ 1 tsp Extra Virgin Olive Oil for cooking
Butter Chicken
1 tsp Extra Virgin Olive Oil
250g Chicken Breast, cut into 3 cm cubes
Spice Mix
2 tbsp Tomato Paste
2 tbsp Natural Yoghurt
1 tsp Salt
1 tsp Garlic Powder
1 tsp Garam Masala
½ tsp Cumin
¼ tsp Turmeric
¼ tsp Chilli
Toppings
¼ cup Tomato Paste
½ cup Cheese, grated
½ Red Onion, sliced
¼ cup Natural Yoghurt
2 tbsp Coriander
Salt & Pepper, to taste
Method
Base
Combine flours & salt in a bowl.
In a separate bowl, combine water, olive oil & yoghurt. Once mixed add to flour and use hands to form a dough.
Divide mixture into 4 equal portions, using a roller, roll mixture on top an oiled surface into circles 2mm thick.
Heat a frying pan with oil on a medium-low heat.
Place each flatbread in pan and cook until browned on each side approximately 3 minutes.
Butter Chicken
In a small bowl, combine all spice ingredients to create a smooth paste.
Add chicken to bowl and coat with spice mix.
Add coated chicken to pan and cook in oil until lightly browned.
Pizza
Preheat oven to 180 degrees fan forced.
Spread tomato paste over base.
Spread cooked butter chicken mixture over pizza base.
Top with cheese and red onion.
Bake for 10 – 12 minutes or until browned.
Serve with yoghurt and fresh coriander.
