Chicken & Edamame Bean Soba Salad

This super fresh chicken and edamame bean soba salad is perfect for whenever you’re feeling like a light but delish meal!!

Using Butcher Crowd’s Free Range, Pasture Raised Chicken this recipe is going to be one that you add to your weekly rotation!!

Servings: 2

Ingredients

50g Soba Noodles 

1 tsp Extra Virgin Olive Oil.

300g Chicken Thigh, sliced into strips

1 Radish, thinly sliced

½ Red Onion, sliced

¼ Cabbage, shredded

½ cup Edamame Beans

2 tbsp Cashews, toasted 

Dressing

2 tbsp Extra Virgin Olive Oil

2 tbsp Tamari 

2 tbsp Rice Wine Vinegar

1 tbsp Sesame Oil

Method

  1. Cook soba as per packet instructions. 

  2. Heat oil in a medium frying pan. Add chicken and cook until browned. 

  3. Combine all dressing ingredients in a small bowl. 

  4. Place all remaining salad ingredients, cooked chicken and soba in a large bowl.

  5.  Drizzle salad with dressing.
